Serving Size: 4 servings
Ingredients:
- 400 g fresh peas
- 200 g carrots
- 1 dl fresh herbs (e.g., basil, parsley)
- 2 tbsp olive oil
- Salt and pepper to taste
- 100 g feta cheese
Instructions:
1. Peel and dice the carrots into small cubes.
2. Boil the carrots in salted water for about 5 minutes until they are tender but still crunchy.
3. Add the peas to the boiling water and cook for an additional 3-5 minutes.
4. Drain the vegetables and transfer them to a bowl.
5. Stir in the chopped fresh herbs and olive oil.
6. Season with salt and pepper.
7. Crumble the feta cheese and sprinkle it over the salad before serving.
