Ingredients:
- 200 g spaghetti - 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese
- 1 garlic clove
- Salt to taste
- Black pepper to taste
- Fresh parsley (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions. 2. Chop the bacon or pancetta into small pieces and fry until crispy in a pan.
3. Add the crushed garlic to the bacon and sauté for one more minute.
4. In a bowl, crack the eggs and whisk them lightly. Add the grated Parmesan cheese and mix well.
5. Once the spaghetti is cooked, drain it and reserve a little cooking water.
6. Combine the hot spaghetti with the bacon and garlic mixture. Remove the pan from the heat.
7. Quickly add the egg mixture to the spaghetti and stir to cook the eggs with residual heat. If needed, add a bit of reserved cooking water for a creamy texture.
8. Season with salt and black pepper. Garnish with fresh parsley if desired.
