Plum Rye-Oat Muffins

These delicious muffins combine the richness of rye flour with the sweetness of plums. A perfect sweet snack or dessert! Preparation Time: 30 minutes
Serving Size: 12 muffins
Ingredients:
- 2 dl sugar
- 2 eggs
- 1.5 tsp baking powder
- 1 tsp vanilla sugar
- 1 dl rolled oats
- 0.5 dl spelt flakes
- 3 dl rye flour
- 0.5 tsp salt
- 1 dl (lactose-free) cream or whipping cream
- (salted) cashew nuts, slightly crushed
- 8 large plums, roughly chopped
- 100 g (lactose-free) butter
Instructions:
1. Preheat the oven to 200°C (390°F).
2. Melt the butter and let it cool slightly.
3. In a bowl, whisk together the sugar and eggs until fluffy.
4. Add the melted butter, cream, baking powder, vanilla sugar, and salt, and mix well.
5. Stir in the rolled oats, spelt flakes, and rye flour until the batter is smooth.
6. Gently fold in the chopped plums and crushed cashew nuts.
7. Divide the batter into muffin tins and bake in the oven for about 20-25 minutes, until the muffins are golden brown and cooked through.
8. Allow to cool before serving.
