These delightful lemon muffins are perfect for a festive occasion, featuring a zesty flavor and a sweet glaze topped with colorful Easter sprinkles.
Ingredients:
- 3 dl all-purpose flour
- 1.5 dl granulated sugar
- 1 tsp vanilla sugar
- 2 tsp baking powder
- 1 lemon
- 0.75 dl liquid margarine (or melted butter)
- 0.75 dl milk
- 2 eggs
For the Glaze:
- 0.5 dl powdered sugar
- 1 tsp lemon juice
- Water (as needed)
For Decoration:
- Easter sprinkles
Instructions:
1. Preheat the oven to 225°C (437°F).
2. In a bowl, mix the dry ingredients: flour, sugar, vanilla sugar, and baking powder.
3. Wash the lemon, dry it, and grate the zest into the dry mixture. Squeeze the lemon juice and add it to the mixture.
4. Add the eggs, liquid margarine, and milk. Stir until just combined.
5. Divide the batter evenly among 12 muffin cups.
6. Bake the muffins in the center of the oven for about 15 minutes, or until golden brown.
7. Allow the muffins to cool before adding the glaze.
8. Mix the powdered sugar with lemon juice and add water gradually until you achieve the desired consistency for the glaze.
9. Spread the glaze over the cooled muffins and decorate with Easter sprinkles.
