Ingredients:

- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 carrots, diced
- 2 potatoes, diced
- 1 zucchini, diced
- 1 liter vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 100 ml cream (optional)
- 2 tbsp fresh parsley, chopped

Instructions:

1. Heat olive oil in a pot over medium heat. Add the chopped onion and minced garlic, and sauté for about 5 minutes until the onion is soft.
2. Add the carrots, potatoes, and zucchini to the pot. Sauté the vegetables for a few minutes.
3. Pour the vegetable broth into the pot and season with salt, black pepper, and thyme. Bring the soup to a boil.
4. Reduce the heat and let the soup simmer for about 15-20 minutes until the vegetables are tender.
5. If using cream, stir it into the soup and heat for a few more minutes.
6. Serve the hot soup in bowls and sprinkle with fresh parsley.
