Ingredients:
- 1 cup cooked quinoa - 1 avocado, sliced
- 1/2 cucumber, diced
- 1 small red onion, chopped
- 1/2 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Cook the quinoa according to package instructions and let it cool. 2. In a bowl, prepare all the fresh vegetables: avocado, cucumber, red onion, bell pepper, and cherry tomatoes.
3. Add the cooled quinoa on top of the vegetables.
4. Sprinkle the feta cheese and parsley over the bowl.
5. Prepare the dressing by mixing olive oil, balsamic vinegar, salt, and pepper.
6. Drizzle the dressing over the bowl and gently mix.
