Ingredients:

- 4 medium potatoes
- 1 onion
- 6 eggs
- 100 ml olive oil
- Salt to taste
- Pepper to taste

Instructions:

1. Peel the potatoes and slice them thinly.
2. Peel and finely chop the onion.
3. Heat the olive oil in a frying pan over medium heat. Add the potato slices and onion, and cook until soft (about 10-15 minutes).
4. Meanwhile, crack the eggs into a bowl and add salt and pepper. Whisk well.
5. Once the potatoes and onions are cooked, transfer them to the bowl with the egg mixture. Gently fold to combine.
6. Pour the mixture back into the pan and cook on low heat for about 5 minutes, until the bottom is beautifully golden brown.
7. Carefully flip the tortilla and cook the other side for another 5 minutes.
8. Transfer the tortilla to a plate and let it cool slightly before serving.
