Lohta Saltimbocca with Potato-Caper Mash

A delicious dish combining melt-in-your-mouth salmon and flavorful potato-caper mash. Roasted lemon wedges add a refreshing touch. Preparation time is about 40 minutes and serves four.Ingredients:
- 4 salmon fillets- Salt
- Black pepper
- 8 sage leaves
- 4 slices of ham
- 1 lemon
- 800 g potatoes
- 3 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons capers
Instructions:
1. Roast the lemon halves in a hot skillet cut-side down for 1–2 minutes until caramelized and golden brown.2. Cut the salmon fillet into four equal portions and season with salt and black pepper. Place sage leaves on top of each piece and wrap with ham slices.
3. Place the salmon on a baking tray lined with parchment paper. Squeeze the roasted lemon juice over the salmon and bake in a preheated oven at 200°C (400°F) for 15–20 minutes.
4. Boil the potatoes in salted water until tender. Drain and allow them to steam dry.
5. Mash the potatoes coarsely with a potato masher and mix in olive oil, chopped parsley, and capers. Adjust seasoning with salt if needed.
6. Serve the salmon pieces alongside the potato-caper mash and roasted lemon wedges.
