A delicious and rich salmon dish made with bacon and fresh herbs, perfect for special occasions or a weekend dinner. Preparation Time: 50 minutes
Serving Size: 6-8
Ingredients:
- 2 kg salmon or rainbow trout- 280 g bacon slices or bacon fillet
- 1 dl parsley, chopped
- 1 dl chives, chopped
- 1 dl dill, chopped
- 20 g butter, cubed
- Freshly ground pepper
- Additional butter for serving
Instructions:
1. Finely chop the parsley, chives, and dill.2. Clean and wash the fish, then dry it thoroughly.
3. Place the fish on a sturdy piece of foil to catch the bacon drippings.
4. Fill the fish with the chopped herbs, two slices of bacon, and cubed butter.
5. Cover the fish completely with bacon slices, from gills to tail.
6. Seal the foil tightly around the fish.
7. Bake in the oven at 225°C (437°F) for about 35 minutes, depending on the size of the fish.
8. Remove the fish from the oven, open the foil, and shape it into a boat.
9. Increase the oven temperature to 250°C (482°F) and bake for an additional 10 minutes until the bacon is beautifully browned.
10. Take it out of the oven and add a few dollops of butter on top to melt.
11. Serve directly from the foil with potatoes and vegetables.
