Ingredients:
- 250 g pasta (e.g., spaghetti or penne)- 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese (grated)
- 2 cloves of garlic (minced)
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve some pasta water.2. In a pan over medium heat, cook the bacon or pancetta until crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper.
4. Add the cooked pasta to the pan with the bacon and garlic. Mix well.
5. Remove the pan from heat and quickly add the egg mixture to the pasta, stirring to combine. This will slightly cook the eggs without scrambling them. If needed, add reserved pasta water to achieve your desired consistency.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
