This delicious salmon pasta is flavored with fresh spinach and zesty lemon. It takes just a little time to prepare and is the perfect weeknight meal. Preparation time: 30 minutes

Ingredients:
- 300 g salmon fillet- 250 g pasta (e.g., spaghetti or fusilli)
- 200 g fresh spinach
- 200 ml cream
- Juice and zest of 1 lemon
- 2 garlic cloves
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a little cooking water.2. Peel and finely chop the garlic cloves. Heat the olive oil in a large skillet over medium heat and add the garlic. Sauté for a few minutes until soft.
3. Add the salmon fillet to the skillet and cook for about 4-5 minutes on each side until the fish is cooked through. Flake the salmon with a fork into small pieces.
4. Add the cream, lemon juice and zest, and fresh spinach to the skillet. Stir well and cook until the spinach is wilted.
5. Combine the cooked pasta with the sauce. If needed, add a little reserved cooking water to achieve the desired consistency. Season with salt and pepper.
6. Serve the dishes garnished with parsley.
