A delicious and easy Lohi-Zukedon is a modern take on traditional sushi. Serve fresh salmon over sushi rice, and you can even torch it with a blowtorch for added flavor.

Ingredients:

- 500 g fresh sushi-grade salmon
- 2 dl sushi rice
- 2.5 dl water
- 3 tbsp rice vinegar
- 1 tbsp sugar
- 1/2 tsp salt
- Soy sauce
- Wasabi
- Sesame seeds (for garnish)
- Pickled cucumbers (for garnish)

Instructions:

1. Rinse the sushi rice in cold water until the water runs clear. Cook the rice according to package instructions with the water.
2. Once the rice is cooked, mix together the rice vinegar, sugar, and salt. Add this mixture to the warm rice and stir gently.
3. Place the rice in a deep serving dish, forming a small mound.
4. Slice the salmon thinly and arrange the slices on top of the rice.
5. (Optional) Use a blowtorch to lightly sear the surface of the salmon.
6. Drizzle soy sauce over the salmon and place a dab of wasabi on the side of the plate.
7. Garnish with sesame seeds and pickled cucumbers before serving.
