Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 200 g fresh spinach
- 200 ml cream
- 1 onion
- 2 garlic cloves
- 50 g Parmesan cheese (grated)
- Salt and black pepper to taste
- 2 tbsp olive oil
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little pasta water.
2. Peel and finely chop the onion and garlic.
3. Heat olive oil in a frying pan over medium heat. Add the onion and garlic, and sauté until softened.
4. Add the fresh spinach to the pan and cook until wilted.
5. Pour the cream into the pan and mix well. Allow the sauce to simmer on low heat for a few minutes.
6. Add the cooked pasta to the sauce and stir. If the sauce is too thick, add a bit of the reserved pasta water.
7. Season with salt and black pepper. Stir in the grated Parmesan cheese until melted.
8. Serve immediately and enjoy!
