Ingredients:
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 carrot, julienned
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch mixed with 2 tablespoons water (optional for thickening)
- Cooked rice or noodles for serving
Instructions:
1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
2. Add the bell pepper, broccoli, snap peas, and carrot to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
3. Add the minced garlic and grated ginger; stir-fry for an additional minute until fragrant.
4. Pour in the soy sauce and sesame oil, and stir to combine. If you prefer a thicker sauce, add the cornstarch mixture and cook for another minute until the sauce thickens.
5. Serve the stir-fried vegetables over cooked rice or noodles.
