Ingredients:
- 200 g pasta (e.g., spaghetti)
- 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese (grated)
- 1 garlic clove (finely chopped)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to the package instructions.
2. Meanwhile, fry the bacon in a pan over medium heat until crispy. Add the garlic and cook for another minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper.
4. Once the pasta is cooked, drain it, reserving a bit of the cooking water.
5. Add the pasta to the pan with the bacon and garlic. Remove the pan from the heat.
6. Pour the egg mixture over the pasta and quickly mix to ensure the eggs cook gently with the heat of the pasta. If the sauce is too thick, add a little reserved pasta water for a creamy consistency.
7. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
