Ingredients:
- 300 g spaghetti
- 150 g pancetta or bacon
- 2 eggs
- 100 g Parmesan cheese, grated
- 2 garlic cloves, crushed
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Boil the spaghetti in salted water according to package instructions. Drain the pasta, reserving a little cooking water.
2. Heat a skillet over medium heat and add the pancetta or bacon. Cook until crispy.
3. Add the crushed garlic to the skillet and sauté for an additional minute.
4. In a bowl, whisk together the eggs and grated Parmesan cheese. Add a bit of black pepper.
5. Add the cooked spaghetti to the skillet with the pancetta and mix well. Remove the skillet from the heat.
6. Pour the egg mixture over the pasta and quickly toss to combine. Add reserved cooking water as needed to create a creamy sauce.
7. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
