Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 150 g spinach
- Salt and pepper to taste
- Fresh basil or parsley for garnish
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a bit of the cooking water.
2. Heat olive oil in a large skillet over medium heat. Add chopped onion and crushed garlic. Sauté for about 2-3 minutes.
3. Add the bell pepper and zucchini to the skillet. Cook for about 5 minutes, until the vegetables soften.
4. Stir in the cherry tomatoes and spinach. Cook for another few minutes until the spinach wilts.
5. Mix the cooked pasta into the vegetable mixture. Add a little reserved cooking water if needed to keep the mixture moist. Season with salt and pepper.
6. Serve the pasta garnished with fresh basil or parsley. Optionally, sprinkle Parmesan cheese on top.
