Ingredients:

- 500 ml - 1 liter plain yogurt
- Salt (optional)
- Zaatar seasoning or other herbal seasoning

Instructions:

1. Pour the yogurt into a fine-mesh sieve lined with cheesecloth or paper towels.
2. Cover the yogurt and place a weight (like a can) on top to allow the liquid to drain.
3. Let the yogurt drain in the refrigerator for 24 hours.
4. Transfer the drained yogurt onto parchment paper and sprinkle with salt and herbal seasoning, if using.
5. Place the yogurt cheese in a dehydrator or in the oven at the lowest temperature setting.
6. Allow the cheese to dry for about 4 hours, until it is firm and sliceable.
