Ingredients:

- 400 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 1 tsp dried basil
- 1 tsp salt
- 1/2 tsp black pepper
- 100 g Parmesan cheese, grated
- Fresh basil for garnish

Instructions:

1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a little pasta water.
2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 5 minutes until soft.
3. Add the crushed garlic and bell pepper. Cook for an additional 3-4 minutes.
4. Stir in the cherry tomatoes, dried basil, salt, and black pepper. Cook for about 5 minutes until the tomatoes start to soften.
5. Add the cooked pasta to the vegetable mixture and mix well. You can add a bit of the reserved pasta water if it seems too dry.
6. Serve the portions topped with grated Parmesan cheese and fresh basil.
