Ingredients:
- 8 oz pasta (fettuccine or your choice)
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: red pepper flakes for a kick
Instructions:
1. Cook the pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
3. Add sliced mushrooms to the skillet and cook until softened, about 5 minutes.
4. Stir in the chopped spinach and cook until wilted, about 2 minutes.
5. Pour in the heavy cream and bring to a gentle simmer. Add grated Parmesan cheese and stir until melted and combined.
6. Season with salt, pepper, and red pepper flakes if desired.
7. Toss the cooked pasta in the creamy sauce until well coated. Serve immediately.
