Ingredients

- 4 eggs
- 200 g sugar
- 100 g all-purpose flour
- 100 g potato flour
- 1 tsp baking powder
Filling:
- 200 g strawberries (fresh or frozen)
- 100 g redcurrants (fresh or frozen)
- 100 g sugar
- 200 ml heavy cream
Frosting:
- Sugar icing (instructions below)
- Fondant

Instructions

1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. Whisk the eggs and sugar together until fluffy.
3. In a separate bowl, mix the all-purpose flour, potato flour, and baking powder. Gradually fold the flour mixture into the egg-sugar mixture.
4. Pour the batter into the prepared pan and bake in the oven for about 25-30 minutes or until the cake is golden brown and cooked through.
5. Allow the cake to cool completely before filling.
6. Prepare the filling by blending the strawberries and redcurrants. Add sugar and mix well. Whip the heavy cream and fold it into the berry mixture.
7. Slice the cake into two or three layers and fill with the berry filling.
8. Prepare the sugar icing and spread it over the top and sides of the cake.
9. Cover the cake with fondant and decorate as desired.
