A rich and flavorful sauce perfect for pairing with lamb or chicken. Preparation Time: 30 minutes
Serving Size: Serves 4
Ingredients:
- 2 tablespoons of oil
- 1 large onion, chopped
- 3 garlic cloves, crushed
- 2 tablespoons fresh ginger, grated
- 1 tablespoon garam masala
- 1 teaspoon turmeric
- 1 teaspoon cayenne pepper (or to taste)
- 1 can (400g) crushed tomatoes
- 200ml coconut milk
- Salt and pepper to taste
- Fresh coriander for garnish
Instructions:
1. Heat the oil in a large pan over medium heat. Add the chopped onion and sauté until soft and golden brown.
2. Add the crushed garlic and grated ginger. Cook for another minute.
3. Stir in the garam masala, turmeric, and cayenne pepper. Cook the spices for a moment until fragrant.
4. Pour in the crushed tomatoes and coconut milk. Mix well and let the sauce simmer on low heat for about 15-20 minutes.
5. Season with salt and pepper to taste.
6. Serve warm with lamb or chicken, and garnish with fresh coriander.
