Laksa - Asian Noodle Soup

A delicious and aromatic noodle soup with coconut milk and spices. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 200 g rice noodles
- 1 tablespoon oil
- 2 garlic cloves, minced
- 1 onion, chopped
- 1 can crushed tomatoes
- 400 ml coconut milk
- 1 liter vegetable broth
- 1 tablespoon curry paste
- 200 g tofu or other protein
- 1 dl fresh cilantro, chopped
- 1 lime, cut into wedges
- Salt and pepper to taste
Instructions:
1. Cook the rice noodles according to the package instructions and drain them.
2. Heat the oil in a large pot over medium heat and add the garlic and onion. Sauté until the onions are soft.
3. Add the crushed tomatoes, coconut milk, and vegetable broth to the pot. Stir well.
4. Add the curry paste and mix until fully dissolved in the liquid.
5. Add the tofu (or other protein) and let the soup simmer on low heat for about 10 minutes.
6. Season the soup with salt and pepper to taste.
7. Gently stir in the cooked rice noodles.
8. Serve the soup topped with cilantro and lime wedges. Enjoy!
