Seafood Noodle Soup (Laksa)

A delicious and spicy seafood noodle soup, perfect for a cozy meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 200 g mussels
- 1 vegetable stock cube
- 2 tbsp canned mushrooms
- 1 tbsp red curry paste
- 1 tbsp fish sauce (Thai)
- 0.5 leek
- 1 red bell pepper
- 100 g light coconut milk
- 100 g bean sprouts
- 2 tsp garlic cloves, minced
- 6 cl lime juice
- 1 tbsp ginger paste
- Water
- 180 g sugar snap peas
- 180 g shrimp
- 1 pack whole grain noodles
- 1 onion
Instructions:
1. Boil water in a pot and add the vegetable stock cube.
2. Add the mussels and cook until they open.
3. Add the leek, onion, red bell pepper, and mushrooms. Sauté for a few minutes.
4. Stir in the red curry paste, fish sauce, coconut milk, ginger paste, and lime juice.
5. Add the sugar snap peas and shrimp, and cook for a few minutes.
6. Prepare the whole grain noodles according to package instructions and add them to the soup.
7. Top with bean sprouts and serve hot.
