A delicious and warming noodle soup that combines flavorful spices with rice noodles. This vegan version can easily be transformed by adding leftover meat or grilled chicken.Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 200 g rice noodles- 1 liter vegetable broth
- 1 can coconut milk
- 2 tbsp curry powder
- 1 tbsp sambal oelek chili paste (or to taste)
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 red bell pepper, sliced
- 1 carrot, sliced
- 100 g peas (fresh or frozen)
- 2 spring onions, chopped
- Fresh coriander for garnish
Instructions:
1. Prepare the rice noodles according to the package instructions and set aside.2. In a pot, heat the vegetable broth and coconut milk.
3. Add the curry powder, sambal oelek, soy sauce, and lime juice. Mix well.
4. Add the bell pepper, carrot, and peas to the broth. Cook for about 5-7 minutes until the vegetables are tender.
5. Stir in the cooked rice noodles and heat for a moment.
6. Serve the soup in bowls and garnish with chopped spring onions and fresh coriander.
