Serving Size: 4-6 people
Ingredients:
- 1 kg moose meat, cubed - 2 tablespoons olive oil
- 1 large onion, chopped
- 2 garlic cloves, crushed
- 3 carrots, sliced
- 3 potatoes, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 dl beef broth
- 1 dl red wine
- 2 bay leaves
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
Instructions:
1. Heat olive oil in a large pot over medium heat. 2. Add the moose meat and brown it on all sides.
3. Add the onion and garlic, sauté until they are soft.
4. Add the carrots and potatoes, stirring well.
5. Season with salt and black pepper.
6. Pour in the beef broth and red wine. Add bay leaves and herbs.
7. Let the stew simmer on low heat for about 1.5 hours until the meat is tender.
8. Serve the stew hot, ideally with fresh bread.
