A delightful and refreshing cake perfect for graduation and summer parties. Serves 12. Preparation Time: 1 hour + 2 hours cooling
Ingredients:
- 200 g butter
- 2 dl sugar
- 4 eggs
- 5 dl all-purpose flour
- 2 tsp baking powder
- 1 dl milk
- 200 g fresh berries (e.g. strawberries, blueberries)
- 2 dl heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla sugar
Instructions:
1. Grease and flour a round cake pan.
2. Beat the butter and sugar together until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In a separate bowl, combine the flour and baking powder. Gradually add the dry mixture to the batter, alternating with the milk.
5. Pour the batter into the prepared pan and smooth the top.
6. Bake at 175°C (350°F) for about 30-35 minutes, or until a toothpick inserted comes out clean.
7. Let the cake cool in the pan for about 10 minutes, then remove it to a wire rack to cool completely.
8. Whip the heavy cream, then add the powdered sugar and vanilla sugar.
9. Spread the whipped cream over the cooled cake and decorate with fresh berries.
