A refreshing and delicious chilled carrot soup that combines sweet apple juice and coconut milk. Ginger and lime add a zesty touch. Preparation Time: 30 minutes

Ingredients:
- 500 g carrots - 400 ml apple juice
- 200 ml coconut milk
- 1 tbsp fresh ginger, grated
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
1. Peel and chop the carrots.2. Place the carrots, apple juice, coconut milk, grated ginger, and lime juice in a high-speed blender.
3. Blend the ingredients until smooth.
4. Season with salt and pepper to taste.
5. Allow the soup to chill in the refrigerator for at least 15 minutes before serving.
6. Serve cold and enjoy!
