Ingredients:
- 4 pork chops
- 4 potatoes
- 3 carrots
- 1 red onion
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- 2 cups vegetable broth
Instructions:
1. Peel and chop the potatoes and carrots. Slice the red onion.
2. Heat olive oil in a large skillet over medium heat.
3. Add the pork chops to the skillet and sear both sides until golden brown, about 4-5 minutes per side. Remove the chops from the skillet and set aside.
4. Add the chopped vegetables and onion to the skillet. Sauté for about 5 minutes until they start to soften.
5. Season the vegetables with salt, pepper, and thyme. Mix well.
6. Place the pork chops on top of the vegetables in the skillet and pour the vegetable broth over everything.
7. Cover the skillet with a lid and simmer on low heat for about 20 minutes, until the vegetables are tender and the pork chops are heated through.
