Ingredients:
- 1 large cucumber
- 1 can chickpeas (about 400 g)
- 1 red onion
- 1/2 cup fresh parsley
- 1/2 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions:
1. Rinse the chickpeas under cold water and drain well.
2. Peel and dice the cucumber into small cubes.
3. Finely chop the red onion and parsley.
4. In a bowl, combine the chickpeas, cucumber cubes, red onion, and parsley.
5. In a separate bowl, whisk together the olive oil, lemon juice, salt, and pepper to create the dressing.
6. Pour the dressing over the salad and mix well.
7. Allow the salad to chill in the refrigerator for about 10-15 minutes before serving.
