Shrimp Sandwiches (Katkarapusämpylät)

A delicious shrimp sandwich perfect for a light lunch or snack. Preparation Time: 30 minutes
Serving Size: 4 sandwiches
Ingredients:
- 1 pack pre-baked (country-style) baguettes
- 1 can (330/170 g) large shrimp in dill brine
- 2 hard-boiled eggs
- 100 g mayonnaise
- 2 tablespoons crème fraîche
- 1.5 tablespoons tomato paste
- 3 green onion stalks, thinly sliced
- 2-3 tablespoons chopped dill
- Zest of half a lemon
- Pinch of cayenne pepper
- Salt to taste
- Butter
Instructions:
1. Bake the baguettes according to the package instructions.
2. Drain the shrimp and chop them into smaller pieces if necessary.
3. Mash the hard-boiled eggs with a fork.
4. In a bowl, mix together the mayonnaise, crème fraîche, tomato paste, green onions, dill, lemon zest, and cayenne pepper. Add salt to taste.
5. Combine the shrimp and mashed eggs with the sauce mixture.
6. Cut the warm baguette in half and slice it open like a book.
7. Spread butter on the cut sides and fill with the shrimp mixture.
8. Serve the sandwiches with a side salad.
