A delicious and nutritious soup with a beautiful color from saffron. This soup is perfect as a starter or a light main course.

Ingredients:

- 400 g perch fillets
- 1 l fish stock
- 1 small onion
- 2 carrots
- 2 potatoes
- 100 ml cream
- 1 tsp saffron
- Salt and black pepper to taste
- Fresh dill for garnish

Instructions:

1. Peel and chop the onion, carrots, and potatoes.
2. Heat the fish stock in a pot and add the chopped vegetables. Cook for about 10 minutes until the vegetables are tender.
3. Add the saffron and stir well.
4. Add the perch fillets to the soup and cook for a few minutes until the fish is cooked through.
5. Pour in the cream and season with salt and black pepper. Heat the soup gently, but do not boil.
6. Serve the soup garnished with fresh dill.
