Ingredients:
- 1 medium cauliflower
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4-6 corn tortillas
- 2 cups shredded cabbage
- 1 cup diced mango
- 2 tablespoons chili sauce
- 1/4 cup chopped cilantro (optional)
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Cut the cauliflower into small florets and place them in a bowl.
3. Add olive oil, paprika, salt, and black pepper to the cauliflower. Mix well to coat.
4. Spread the cauliflower on a baking sheet and roast for about 25-30 minutes until golden brown and crispy.
5. Prepare the slaw by combining shredded cabbage and diced mango in a bowl. Add chili sauce and mix.
6. Warm the corn tortillas in a skillet or oven.
7. Assemble the tacos: place roasted cauliflower on each tortilla, top with cabbage-mango slaw, and sprinkle with chopped cilantro if desired.
8. Serve immediately and enjoy!
