Ingredients:
- 300 g spaghetti
- 150 g bacon or pancetta
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Heat a frying pan and add the bacon or pancetta. Cook until crispy.
3. Add crushed garlic to the bacon and sauté for a moment, being careful not to burn it.
4. In a bowl, whisk the eggs and mix in the grated Parmesan cheese. Season with salt and black pepper.
5. Once the pasta is done, drain it and save a little cooking water.
6. Combine the hot pasta with the bacon and garlic in the pan. Remove the pan from the heat.
7. Quickly mix the egg mixture into the pasta, ensuring the eggs cook from the heat but do not scramble. Add a little reserved pasta water if necessary.
8. Serve immediately, garnished with fresh parsley and additional grated Parmesan cheese on top.
