Ingredients:
- 300 g spaghetti
- 150 g diced bacon or pancetta
- 2 large eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves, minced
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook spaghetti in salted water according to package instructions until al dente. Reserve 1 cup of the cooking water and drain the pasta.
2. In a skillet over medium heat, add the bacon and cook until crispy, about 5-7 minutes.
3. Add minced garlic to the pan and sauté for about 1 minute.
4. In a bowl, whisk together the eggs and grated Parmesan cheese. Add a pinch of black pepper.
5. Add the cooked pasta to the skillet with the bacon and garlic. Mix well.
6. Remove the pan from heat and pour the egg mixture over the pasta. Stir quickly to prevent the eggs from scrambling, creating a creamy sauce. Add reserved cooking water if the sauce is too thick.
7. Season with salt and black pepper. Serve immediately, garnished with fresh parsley if desired.
