A delicious, quick and easy meal to whip up for the whole family after a busy day. Kids will love it! Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (such as penne or fusilli) - 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 200 g cherry tomatoes, halved
- 150 g spinach
- 100 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little pasta water. 2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until softened.
3. Add bell pepper and cherry tomatoes, cook for a few minutes until tomatoes begin to soften.
4. Stir in spinach and cook until wilted. Season with salt and pepper.
5. Mix the cooked pasta with the vegetables. Add reserved pasta water as needed for moisture.
6. Sprinkle grated Parmesan cheese on top and mix well.
7. Garnish with fresh basil and serve immediately.
