Ingredients:
- 400 g pasta (e.g., spaghetti)
- 150 g bacon or pancetta
- 2 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt
- Black pepper
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Meanwhile, heat a skillet over medium heat and add the bacon or pancetta. Cook until crispy.
3. Add the minced garlic to the skillet and sauté for an additional 1-2 minutes.
4. In a bowl, whisk together the eggs and grated Parmesan cheese. Season the mixture with salt and black pepper.
5. Once the pasta is cooked, drain it and reserve a little cooking water. Add the pasta to the bacon and garlic mixture in the skillet.
6. Remove the skillet from heat and quickly add the egg mixture to the pasta. Stir rapidly to ensure the eggs cook gently and create a creamy sauce. If the sauce is too thick, add a little reserved cooking water.
7. Serve immediately, topping with additional Parmesan cheese and fresh parsley if desired.
