A delightful dish featuring large chanterelle mushrooms and succulent scallops in a flavorful fish broth.
Ingredients:
- 2 large chanterelle mushroom stems, firm and of good quality
- 3 dl water
- 2 tbsp grated horseradish
- 50 g sea kale
- 30 g butter
- 100 g small fish or fish bones
- 1 tbsp lemon juice
- 1 shallot
- Salt to taste
- Cooking oil
Instructions:
1. Prepare the fish broth: In a pot, heat the butter and sauté the chopped shallot for a moment.
2. Add the small fish or fish bones to the pot and pour in the water. Let it simmer on low heat for about 20 minutes.
3. Strain the fish broth and season it with lemon juice and salt.
4. In a skillet, heat some cooking oil and sauté the chanterelle stems until they are beautifully browned.
5. Add the grated horseradish and sea kale to the skillet. Mix well and heat for a moment longer.
6. Serve the scallops with the warm fish broth. Enjoy!
