Ingredients:
- 4 large scallops
- 400 g green papaya
- Salt to taste
- 1 tbsp lime juice
- 0.5 tsp chili paste (e.g., sambal oelek)
- 1 tbsp crushed peanuts
- 2 tbsp peanut oil for frying
- 1.5 dl coconut milk
- 1 tbsp chopped cilantro
- 1 tbsp sugar
- 1 tbsp rice vinegar
- 1 tbsp fish sauce
Instructions:
1. Marinate the scallops in a mixture of coconut milk, lime juice, chili paste, sugar, rice vinegar, and fish sauce for about 30 minutes.
2. Peel and slice the green papaya into thin strips. Season with salt.
3. Heat peanut oil in a frying pan over medium heat.
4. Fry the scallops for about 2-3 minutes on each side until cooked through and golden brown.
5. Serve the scallops with green papaya, garnished with crushed peanuts and chopped cilantro.
