Coconut Milk Braised Meatballs

A delicious and easy-to-make dish that combines Asian flavors with traditional meatballs. Perfect for a family weekday meal. Preparation Time: 45 minutes

Ingredients:
- 2 dl milk - 1 dl breadcrumbs
- 1/2 onion
- 2 garlic cloves
- 3 x 3 cm piece of ginger
- A couple of pinches of salt
- 500 g ground pork
- 1 egg
- A bunch of coriander
- 4 spring onion stalks (optional)
- 5 dl coconut milk
- 3 tbsp fish sauce
- Juice of 1/2 lime
- 2 carrots
- 2 tomatoes
- 1.5 tsp lemongrass paste (or 1 stalk of fresh lemongrass, finely chopped)
- 1 red chili, finely chopped (optional)
Instructions:
1. Mix the milk and breadcrumbs, and let it soak for about 15 minutes. Grate half of the ginger and add it to the mixture. Finely chop the onion, garlic, half of the coriander, and two spring onion stalks. Add salt, ground pork, and egg, and mix until smooth. Allow it to rest. 2. Chop the remaining coriander and spring onions. Finely chop the chili, cut the tomatoes into wedges, and julienne the carrots.
3. Roll the meat mixture into balls. Sear the meatballs in a splash of oil in a deep pan on both sides until they are nicely browned. Set aside.
4. In the same pan, add a splash of oil and sauté the carrot strips for a moment. Add the coconut milk, remaining grated ginger, fish sauce, lime juice, chili, and lemongrass paste. Bring to a boil and reduce the heat. Add the meatballs to the coconut milk and let them cook for about 10 minutes covered.
5. Add the tomato wedges and spring onions, and let simmer for another minute or two. Finally, add the remaining coriander and serve with cooked rice.
