Ingredients:
- 150 g butter
- 2 dl sugar
- 4 dl flour
- 2 tsp vanilla sugar
- 2 tsp baking powder
- 1.5 dl shredded coconut
- 2 dl berries (e.g., blueberries or raspberries)
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. In a bowl, cream the softened butter and sugar until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In another bowl, combine the dry ingredients (flour, vanilla sugar, and baking powder) and gradually add to the batter, alternating with the shredded coconut.
5. Gently fold in the berries into the batter.
6. Pour the batter into the prepared cake pan and smooth the surface.
7. Bake in the oven for about 40-50 minutes, or until the cake is golden brown and cooked through. Check for doneness with a toothpick.
8. Allow the cake to cool before serving. Optionally, dust with powdered sugar or serve with whipped cream.
