A delightful and healthy brunch perfect for enjoying with friends. Preparation time: 1 hour. Serving size: 4.
Ingredients:
- 4 slices of whole grain bread
- 2 avocados
- 200 g cream cheese
- Juice of 1 lemon
- 100 g cherry tomatoes
- 100 g salad (e.g., arugula or spinach)
- 2 eggs
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., basil or parsley) for garnish
Instructions:
1. Start by toasting the whole grain bread slices until lightly browned.
2. At the same time, boil the eggs to your desired doneness (about 6-8 minutes).
3. Cut the avocados in half, remove the pits, and mash them in a bowl with lemon juice, salt, and pepper.
4. Spread the avocado mash over the toasted bread. Add a layer of cream cheese on top.
5. Slice the cherry tomatoes in half and arrange them on the bread.
6. Make the salad by mixing the greens with olive oil, salt, and pepper.
7. Peel and slice the boiled eggs. Place them on top of the brunch.
8. Garnish with fresh herbs and serve immediately.
