A delicious pasta dish featuring sautéed chanterelle mushrooms, shallots, garlic, and a touch of white wine, topped with Parmesan cheese.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- Butter for frying
- 2 large or 3 medium firm chanterelle mushrooms
- 1 shallot or small spring onion
- 1 clove of garlic
- 2 dl white wine
- Salt or herb salt
- Black pepper
- 70 g butter
- Grated Parmesan cheese
- Pappardelle pasta (about 500 g)
Instructions:
1. Bring a pot of salted water to a boil for the pasta.
2. Heat a pan and melt some butter over medium heat.
3. Add the sliced chanterelle mushrooms in batches. Sauté without stirring until golden brown on one side. Flip and sauté the other side until golden. Remove the cooked mushrooms and set aside.
4. Cook the pasta according to the package instructions in the boiling water.
5. If needed, add a splash of oil or a knob of butter to the pan. Add the chopped shallot and crushed garlic. Sauté the vegetables until soft.
6. Pour in the white wine and season with salt and pepper. Once the wine reduces to about a cup, remove the pan from heat.
7. Add the sautéed mushrooms and 70 g of butter to the pan. Stir until the butter melts and forms an emulsion.
8. Drain the cooked pasta and add it to the pan. Toss well to combine and let it sit for a few minutes to absorb the flavors.
9. Grate Parmesan cheese on top and serve immediately.
