Ingredients:
- 1 cup sugar - 1/2 cup butter (softened)
- 2 eggs
- 1/2 cup milk
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon vanilla sugar
- Juice and zest of 1 lemon
- A pinch of salt
Instructions:
1. Preheat the oven to 350°F (175°C). Grease a muffin tin or use paper liners. 2. In a mixing bowl, cream together the sugar and butter until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. Stir in the milk, lemon juice, and lemon zest until smooth.
5. In a separate bowl, combine the dry ingredients: flour, baking powder, vanilla sugar, and salt.
6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
7. Divide the batter evenly among the muffin cups and bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
