A delightful cherry pie reminiscent of the beautiful cherry trees in Roihuvuori. Perfect for enjoying on summer days.

Serving Size: 8 pieces

Ingredients:

- 200 g butter
- 200 g sugar
- 3 dl all-purpose flour
- 1 dl potato flour
- 2 tsp baking powder
- 2 eggs
- 1 tsp vanilla sugar
- 400 g cherries (fresh or frozen)
- 1 tbsp lemon juice
- Powdered sugar (for decoration)

Instructions:

1. Preheat the oven to 175°C (350°F).
2. Grease a pie dish and sprinkle a little flour at the bottom.
3. Melt the butter and let it cool.
4. In a bowl, combine the sugar and melted butter. Add the eggs one at a time, mixing well.
5. Add the all-purpose flour, potato flour, baking powder, and vanilla sugar to the batter. Mix until smooth.
6. Pour the batter into the pie dish.
7. Mix the cherries with lemon juice and spread them over the batter.
8. Bake in the oven for about 30-35 minutes or until the top is golden brown.
9. Allow to cool before serving and dust with powdered sugar.
