A delightful caramel frosting that adds sweetness and flavor to the cake. Easy to prepare and perfect for topping mini muffins.
Preparation Time: 1 hour + chilling time
Serving Size: 8-10 servings

Ingredients:

- 1 cup heavy cream
- 1 cup brown sugar
- 1 ½ cups whipping cream

Instructions:

1. Heat the heavy cream and brown sugar in a saucepan.
2. Remove the saucepan from heat when the mixture starts to bubble. Do not boil into caramel.
3. Allow the mixture to cool slightly, then transfer it to the refrigerator. It's best to prepare this the day before for optimal chill.
4. Whip the chilled caramel cream until fluffy.
5. Also whip the whipping cream until fluffy.
6. Gently fold the caramel mixture into the whipped cream.
7. Pipe the frosting on top of the cake and decorate as desired.
