Ingredients:
- 1 tablespoon olive oil - 1 onion, chopped
- 2 garlic cloves, crushed
- 3 carrots, diced
- 2 celery stalks, chopped
- 1 potato, diced
- 1 zucchini, diced
- 1 liter vegetable broth
- 400 g canned peaches, drained and diced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and crushed garlic, sauté for about 3-4 minutes until the onion is soft.2. Add the diced carrots, celery, and potato. Cook for another 5 minutes until the vegetables begin to soften.
3. Stir in the zucchini and vegetable broth. Bring to a boil, then reduce the heat. Let the soup simmer on low for about 15-20 minutes until all the vegetables are tender.
4. Add the diced canned peaches to the soup and season with salt and pepper. Allow the soup to warm for a few more minutes.
5. Serve the soup hot, garnished with fresh parsley.
