Ingredients:
- 300 g pasta (e.g., spaghetti)
- 150 g bacon or guanciale
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley for garnish
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente.
2. Cut the bacon into small pieces and cook in a pan over medium heat until crispy. Add the crushed garlic cloves to the pan and sauté for an additional minute.
3. Be careful not to burn the garlic. Remove the pan from heat.
4. In a bowl, whisk the eggs and mix in the grated Parmesan cheese, salt, and black pepper.
5. Once the pasta is ready, drain it, saving a little pasta water. Add the pasta to the pan with the bacon and garlic.
6. Remove the pan from heat and pour the egg mixture over the pasta. Stir quickly to ensure the eggs cook slightly in the warm pasta without turning into scrambled eggs.
7. If necessary, add a little reserved pasta water to make the sauce creamy. Season with additional salt and pepper to taste.
8. Serve immediately, garnished with fresh parsley.
