A quick and easy tomato-mozzarella pasta perfect for a weekend dinner or a weekday treat. Preparation Time: 20 minutes

Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 400 g cherry tomatoes
- 250 g mozzarella cheese
- 2 garlic cloves
- 4 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain and reserve a little cooking water.
2. Heat olive oil in a pan over medium heat. Add minced garlic and sauté until golden.
3. Add the cherry tomatoes to the pan. Cook until the tomatoes are soft and start to break down.
4. Add the cooked pasta to the pan and mix well. If the pasta is too dry, add a little reserved cooking water.
5. Cut the mozzarella cheese into pieces and add it to the pasta. Stir until the cheese slightly melts.
6. Season with salt and pepper to taste.
7. Serve the pasta topped with fresh basil and grated Parmesan cheese if desired.
