Ingredients:
- 300 g spaghetti
- 150 g bacon or pancetta
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti in salted water according to the package instructions until al dente.
2. Meanwhile, heat a skillet over medium heat and cook the bacon until crispy. Add the crushed garlic cloves to the skillet and sauté for one minute.
3. In a bowl, whisk the eggs and mix in the grated Parmesan cheese, salt, and black pepper.
4. When the pasta is cooked, drain it and reserve a bit of the cooking water. Add the hot pasta to the skillet with the bacon and garlic.
5. Remove the skillet from heat and pour the egg mixture over the pasta. Stir quickly to cook the eggs without scrambling them. Add a little reserved cooking water if needed to achieve a creamy consistency.
6. Serve immediately, garnished with fresh parsley if desired.
